Making one of my favorite comfort food recipes. If you do not own a mr chops-a-lot, this will be much more work for you than it is for me.
* Heat up your heavy cooking pot (Le Creuset if you got it) to medium-high.
* Shred one decent sized onion. Put it in your heavy cooking pot along with 1/4 cup (half a stick) of butter.
* Smoosh it around until the onion turns golden brown and soft. 15 minutes or so.
* While that’s happening, shred a decent sized cabbage.
* Once the onions are cooked, add 1 and a half tablespoons of paprika. Smoosh it around for another minute or so.
* Dump in the cabbage, and 2 teaspoons of salt. Stir. Smoosh for five more minutes.
* Lower heat to “low” and cover. Cook (smooshing occasionally) for about an hour, give or take.
* When you’re almost ready to serve, make up a batch of egg noodles (standard boiling water routine) and dump ’em in.
* Add black pepper to taste.
* If desired, garnish with a dollop of sour cream.
It’s almost like stroganoff, but without the beef. Plus, despite what you would think…there’s almost never any gastrointestinal side effects … despite the dish consisting of one onion and one whole cabbage. I like to think that the long simmering time cooks out all the evil gut twisting juices.
