Just got done canning the pickled beets. I love beets, since everything they touch becomes red. I now have red palms. I think that I finally understand pickled beets. It used to take me about three hours to make a batch, now it’s down to one (plus half an hour processing time during which I can do other stuff). The key is in the skinning and slicing. Once you understand how to skin a beet, many other parts of the process become trivial.
Also mixed up another batch of gazpacho. Added the leftover seveche from last night to it as an afterthought, and *wow*. Those two things go together really nicely. I made a scallop seveche yesterday, on a whim, and we only ate about a third of it. Now it gains new life as part of a tomato soup!
Bought a tiny chiminea yesterday. It’s about a foot tall, and can only handle small twigs and sticks. Still, it was pleasant to sit outside and watch a cheerful little fire burn in a cheerful little fire pot.
Today I’m installing Windows on a laptop given to me by a friend. This will mean that I have a Windows machine around, should I need one. Very convenient … but this whole “software you have to pay for” thing is a pain in the butt! License codes, piracy protection, blah blah.
